Today I have come to share a special recipe that ive made for my family and I hope you like it, as much as my family enjoyed it.
This recipe is called OFE Akwu in my native language but in english we can call it palm fruit stew.
It us made by processing palm fruit and taking out the water to make stew.
Ingredients
- Palm fruit - 1 paint
- Stock
Steps to cook it
- First is to pound the palm fruits in a mortar, separate tje chaff by adding some water and then extract the water which would be used for the stew
After extracting the water, it is put on fire to boil.We also add the parboiled stockfish to it and some salt and seasoning cubes and let it boil.
After that we pound crayfish pepper and onions to taste and we also add it to the boiling pot
After we let it boil for like 5 minutes we add the special Ofe Akwu ingredients to it. This particular ingredients is what gives it the unique taste
After putting the special ingredients we also let it boil for a few minutes and then we put he already cut scent leaves in it
At this after a while it is ready to be served.
I usually serve it with rice and beans for my family to enjoy. We all love this stew so much. And this particular one came as a surprise to my children because it had been very long since they had this
