Hello good people of steem activity club, I'm glad to be a part this competition organized by @habercitr.
Here is my entry.

The name of this dish is moulded egusi soup. Egusi is called melon seeds in English. It is a protein rich seed that is used widely across west Africa. However this method of preparing the dish is particular to people of some certain parts of Abia state in Nigeria. The melon seeds are grounded and moulded with the help of a binder called osu. The dish is very delicious and has many nutritional values. You can enjoy this dish with any swallow you like.

Ingredients for preparing the dish

  • Egusi (melon seeds)
  • Osu (binder)
  • Achi (thickener)
  • Meat of any choice, I used beef.
  • Dry stock fish
  • Pepper
  • Seasoning
  • Salt
  • Dry bonga fish (ground)
  • Dry crayfish (ground)
  • Palm oil
  • Okazi leaves

Method

  • Wash the stockfish and beef and put in a clean pot. Add salt and seasoning and boil for 20 minutes. Remove the meat and stockfish from the stock water and set aside.
  • Pour the melon and osu in a clean bowl or mortar, add salt and pepper and mix add a little hot water and fold it in until it sticks together and oil starts coming out. Mould in small bits.
  • Pour in the moulded melon into the boiling stock water and cook till its done.
  • Add palm oil, ground egusi and let it boil. Add ground crayfish, bonga fish, seasoning and little salt. Let it cook for a minute, add the thickener and let it boil to dissolve well in the pot. Pour in the cooked meat and stock fish and finally add the okazi leaves. Turn off the stove after 3 minutes.
