Hello my fellow steemians, it is with joy, that I participate in this contest.
This contest has given me an opportunity to let people know about a local food in my community, here in Africa.
Let me introduce to you, "Ikokoo" OR "Ekpang" (water yam portage).
It's a local food in Africa prepared with water yam.
It is called "Ikokoo" in the south east. But the southwest calls it "Ekpang". It is mostly prepared occasionally, it is a very rich food, and consumes a lot of time in preparing.
I will list out the items for the preparation of this local food called "Ikokoo".
ITEMS:
Water yam ( mbana)
Crayfish
Red oil
Periwinkle
Vegetable
Spices
Onions
Smoked Fish
Salt
Pepper
PROCEDURES:
Slice your water yam into small piece, peel off the back then wash in clean water.
Use a grater in grating the sliced water yam,.
When you are done grating, add salt to the grated water yam, then set aside. Wash your vegetable and slice. Set it aside after slicing.
Put all ingredients :(fish, spice, periwinkle, crayfish, onions,salt, pepper) in the pot, add water, cover the pot and then set on the fire to boil.
Add red oil to the boiling water on the fire. Cover your pot and allow the re oil mix up with the boiling water.
After some minutes, you start adding your grated water yam in a ball form.
While adding it , you are also adding your vegetable along.
Cover the pot and allow to boil for 20 minutes.
Then bring down your pot and off the fire.
FOOD IS READY!!!
