Greetings, my fellow steemians. I trust we all are having a good time. I am happy to be a partaker of this great and awesome contest.
I will be sharing with you a local food I prepared called "abacha" (African Salad). It is a meal mostly found in the eastern part of Nigeria. It is gotten from shredded cassava.
Abacha is one meal that is enjoyed by the igbo's. One thing about this meal is that, you can create your own pattern for preparing the meal. It's so easy to prepare. It's taste is so distinctive, making it palatable to be enjoyed by all. Most persons prepare this meal during weddings, child dedication, etc. Abacha is served with Nigeria local wine called Palm wine. But you can also enjoy it with any chilled drink of your choice.
INGREDIENTS FOR ABACHA
• Abacha (dried shredded cassava)
• palm oil
• seasoning cube
• crayfish
• potash
• pepper
• onions
• salt
• meat, fish, kpomo etc. (optional)
STEPS
Wash your meat or fish or kpomo, put it in a pot and boil for 20mins. You can fry your fish,meat or you can smoke it. I prefer smoke meat. The kpomo is meant to be sliced in tiny bits. Sat them aside for later use.
Soak your abacha (shredded cassava) in hot water for 2mins, while you've soaked it, put your potash in a bowl and dissolve with a little amount of water, then sieve out the water and set aside. Now, sieve out the abacha and set aside.
Preparation proper
Pour red oil into a clean dry pot, add the liquid potash and mix until the color begins to change and the mixture becomes thick.
Add crayfish, pepper, stock cube, and mix thoroughly until well combined. Now place your pot on a low heat, add the strained abacha, adjust for salt if necessary. Mix well and put off the fire. Food is ready....
Note: do not over heat, else the outcome will be a pottage abacha or a burnt abacha.
Put in a plate and serve.......
