rv-tasty || Jellof Rice

Hello! A warm greeting to you all in this Reflections on Life. I'm @noraandy by profile and in here for this wonderful and exciting contest about rv-tasty by @tahispadron.

This delicious yummy dish is called Jellof rice and it's really enjoyed everywhere. It is served at home for family gathering and also at occasions and celebrations along side other dishes.

Ingredients needed for Jellof rice

  • Rice (main ingredient)

  • Tomatoes (paste or fresh)

  • Pepper/onions

  • Maggi/salt

  • Chicken (any protein)

  • Groundnut oil

  • Nutmeg/thyme/curry


Steps-by-step method

  • The rice is washed and put on fire to cook for sometime before parboiling. Likewise the chicken is washed properly, seasoned with condiments like salt, Maggi, onions, pepper, curry and thyme.

  • When the rice is half done to my texture, I sieve it and wash it and keep aside.

  • In my empty pot, I add groundnut oil and allow it seat for few minute, then I add my chopped onions and stir, then I add my tomatoes paste and stir to get the slappy taste out of it.

  • At the taste where it doesn't slap anymore, I add water that will get the rice done and add other ingredients like the nut meg, chicken stock, pepper, onions, salt and Maggi and allow it boil.

  • Last step, once the water boils, you pour in the rice and cover the pot to cook well.

Hints about cooking Jellof rice

  • You would not want to stir with your spoon or spatula to reach the rock bottom of the pot.

  • Once the rice is cooked half done, the water to cook it to done should be small.

  • Most times it always gets a burn before it's cooked well and the water dries up, but you might want to keep the heat on low to cook well.

  • This dish is enjoyed with a cold fruit juice or drink of choice.
