My tasty recipe today is called Plantain porridge and I must say, it's really an interesting dish to have at anytime if the day. It's not a heavy meal depending on your served quantity. And plantain is high in vitamins, fiber and mineral which is good for health.
Ingredients
The ingredients used for this dish are;
- Unripe Plantain
- Pepper & onions
- Crayfish
- Dried fish
- Periwinkle
- Scent leaf
- Maggi & salt
- Palm oil
Steps-by-steps Preparation
- First wash and unpeel the plantain, them dice into small cubes.
- Soak the fish in hot water to remove dirt and the smoke with dust to make it clean.
- Pound the crayfish with pepper.
- Cut and wash the periwinkle and onions.
- Wash and cut the scent leaf and set all aside.
Cooking steps
- Pour in the plantain into the pot and add water, allow it to boil for some minutes thereby allowing the plantain get soft.
- Then add the periwinkle and onions to the boiling pot and stir .
- Go ahead to add the crayfish and pepper and allow it to boil
- Then I add the palm oil and stir it and allow it boil for condiments to go round.
- When it's to my texture, I added the scent leaf and allowed it boil.
- The final process looks like this and it's ready for dishing.
