Steem greetings @everyone and welcome to my blog as I share my daily lifestyle content with you all. We are witnessing one of the longest weekends due to 2 days of lockdown imposed by separatist fighters. On such long weekends, I often engaged in doing a lot of house chores.
That said, it was Sunday as usual, a day of worship for us Christians but I decided to worship online at home. I often stay away from gatherings during periods of imposed lockdowns for personal security reasons.
After my fellowship online, I decided to prepare my delicious puff puff for breakfast. I do not buy puff puff from roadside vendors because of the hygienic condition it is prepared. I do a special mixture this time around without using sugar but rather overripe bananas as sweeteners.

I had to first peel my bananas cut them into smaller sizes and put them in a blender. I heated water and added in the bananas, added egg yolk and white, added powdered milk and blended until I got a smooth paste though watering because of the hot water added. Then I poured the blended mixture into a bowl and added nut milk, baking powder and yeast. I used my whisk to mix and added the flour and mixed well until I got a smooth texture not too soft and not too hard. Allow it well closed for about 30 to an hour to rise And you started frying using vegetable oil.
When I was done with the puff-puff preparation, my kids so much loved it because of the milk and eggs in the mixture that made it fluffy and crunchy. I heated water and we all took our bath and napped for a while.
In the afternoon period, I noticed that milk and custard powder and my baby’s diapers could not sustain us till after the lockdown. I had to rush to a local community market around my neighbourhood. Whenever there is imposed lockdown, after the weekend, Sunday is fully used as a market day. Normally our markets here do not open on Sundays.

The scorching sun and the harmattan dust are still a huge challenge for me but I had no choice. When I arrived at the market, I went to a cold store to buy fresh fish for our meal for the next day. I bought diapers, custard powder and 2500g of powdered milk.

I returned home and was exhausted due to the movement I walked under the scorching sun. Then I noticed that drinking water was finished and I went back to a store in my neighbourhood to purchase drinking water. We do not drink tap water because it is usually not clean enough.
In the evening hours, we engaged in watching the Emirates FA Cup matches between Aston Villa versus Tottenham. Later we watched the Laliga game between Barcelona versus Sevilla. After the games, we called it a day as we switched off the lights and went to bed. Until my next diary session, I wish all the youths of Cameroon a happy youth day in advance.
That's like cool banana bread. Sounds good.
Did you know about carbon filter water purifiers? You can also stage them. Then put filters in that remove grit and other stuff first before the carbon.
1 drop of chlorine bleach per five gallons of water and waiting twenty-four hours works good. It's cheap and I have done it for over a decade.

If the water is really nasty you can shoot it through a couple of socks first or into a box of sand with thick cotton padding on the bottom., set on the top of a wide mouth water barrel first.

You can buy it online. I don't think it's $40 for filter holder. The filter cartridges are about $12. The sump pump is like $35. There are several brands

Now this is quite and interesting recipe as once a month I cook something similar, although a bit simpler as ingredients. Wheat flour (I prefer type 650 over 500 as 650 has more fibers), baking soda with one yogurt that activates it, eggs and a pinch of grinded sea salt. I fry this in hot sunflower oil and we usually eat that with all kinds of fruit jams and honey. It a quick and easy recipe, I love that I don't have to wait as no yeast included ;) Perfect for the weekend mornings.
Argh, I should probably put up a proper article about it, one day, hehe.

I will surely try your recipe without using yeast. I think yeast wastes time, and I will not have to wait for some time before frying. I can't wait to read your full recipe in the article.

I generally try to avoid using yeast, of course, that isn't easy when baking something :)
I think probably in the next months I will create a separate account that will be my personal cuisine experience, I don't want to mix with my photography and travel posts. But I know already, I won't be posting much, as you know, I'm sadly a typical man, single-tasking, I either cook or photograph, hehehe. Can't do both or at least haven't figured yet the best way to do it :)))

Meanwhile, here is the recipe, I hope it works well for you.
3 L-size eggs
2 tea cups flour (that's about 270-300 gr.)
1 bucket of yogurt 400 gr.
1 tsp. baking soda
The buns are really very easy to make. In a bowl, put and lightly beat the eggs. Sometimes I use the mixer, sometimes I beat by hand :) Then add the flour and the pre-mixed yogurt and soda. The latter will foam and start to increase in volume, which is what makes the buns so fluffy.
Put a saucepan with oil on the stove. The amount of oil should be more so that the buns float and don't reach the bottom. That's why I use saucepan and not a regular pan, to save oil. Usually when they are ready from the frying bottom part, they spin all by themselves, it happens quickly ;) Our stove has 9 levels, I fry on 7th or 8th, smoke coming out of the oil indicates to me its too hot.
I simply use two spoons - one to grab a "dose" and the other to push it inside the hot oil to fry ;) Shapes of the buns are... quite random, lol, especially if the mixture isn't very thick.
