Today I am here to share with you a famous Bengal Cuisine "Echor Chingri"( raw Jackfruit with Prawns). Did you know friends the benefits of raw jackfruit? You will be surprised to know the benefits of raw jackfruit. Which is popularly known as 'Kathal', it is not just sumptuous but offers a staggering nutritional profile. It is high in protein and very unusual for a vegetable, but raw jackfruit is one of those rarities that contains 3g of protein per cup. While that isn't as much as an egg or lean meat. It's still fabulous as far as veggies go! Jackfruit is contain low calorie, while it is fibre rich and lesser calories than most carby veggies like potatoes or beets, as well as grains.

It helps to boosts immunity, as it contains vitamin C, which in turn helps boost the body's immunity and prevents dieses. It also has anti- inflammatory properties, which keeps a vast number of aliments ranging from arthritis to stomach problems at bay. It aids heart healthy, keep the blood circulation going, and can prevent cholesterol. Those who are vegetarian it's a great meat-substitute. Jackfruit is extremely versatile and the texture lends itself to a meaty substitute in curries, biryanis and other dishes. Even the jackfruit seeds can be used to add taste and nutrition to dishes. Ingredients:-

  1. Jackfruit- 500g.

  2. Prawns- 250g.

  3. Potato- 1cup(diced).

  4. Onion paste- 2tbsp.

  5. Ginger paste- 2tsp.

  6. Garlic paste- 2tsp.

  7. Green chili paste- 1tsp.

  8. Tomato - 1medium( diced).

  9. Red chili powder- 1-1/2 tsp.

  10. Coriander powder- 1tsp.

  11. Cumin powder- 1tsp.

  12. Turmeric powder- 2-1/2 tsp.

  13. Garam Masala powder- 1/2 tsp.

  14. Bay leaf- 1(whole).

  15. Dry red chili- 2 nos.

  16. Salt-To taste.

  17. Sugar- 1tsp.

  18. Ghee(clarified butter)- 2tbsp.

  19. Mustard oil- 1cup.

  20. Cumin seeds- 1 tsp.

Preparation Method:-

Step 1- First rub your hand with mustard oil, before cutting raw jackfruit to avoid sticky latex to stick to hand. Skin off the jackfruit and cut into bite size pieces.

Step 2- Heat sufficient water in a deep pan. Once water will start boiling add salt, 1/2 tsp of turmeric powder and 1tbsp of mustard oil. Now add jackfruit pieces. Cook until jackfruit semi tender. Drain water and transfer jackfruit into a bowl. Set aside.

Step 3- Place a wok on medium flame. Add mustard oil. Once oil heated well add bay leaf, dry red chilies, cumin seeds. Saute for few seconds.

Step 4- Next add potatoes. Fry them until light golden. Now add Prawns. Fry until they turn pink.

Step 5- Now add onion paste, ginger paste, garlic paste, salt, turmeric powder. Saute until raw aroma goes away.

Step 6- Add tomatoes, coriander powder, cumin powder, red chili powder, green chili paste, sugar. Combine well and cook for 4-5 minutes.

Step 7- Now add semi tender jackfruit, and mix all ingredients well. Cook until spices start seperating from oil.

Step 8- Next add 1 cup of water. Mix well to get gravy. Cover the wok and lower the flame. Cook for 6-7 minutes or until jackfruit cooked well and potatoes are well boiled.

Step 9- Next add garam masala, and mix well. Taste salt and spice add this stage and adjust according your taste.

Step 10- Now add ghee and give a quick mix. Turn off the flame and cover the wok for 5 minutes. This will help to absorb the flavour into the jackfruit well.

Step 11- Now it's ready to serve hot with steamed rice.
