Homemade Moose snack sticks

So I wanted some snack sticks but also don’t like paying for some one to process my meat. Also around here you are not guaranteed to get you own meat back, this bothers me. We take great care in processing our meat.

@alaskahippie took the first bite and said you need to make more. She can’t eat beaf so this is a nice treat for her.

I started with 4lbs of ground moose meat

Next I added 1lb of ground pork fat

Then mix the meat and pork fat together. Add your spices. I mixed it by hand for about 5 min. image.jpg
we used a pre made seasoning

now load the seasoned meat into you casings
I used a LEM Jerky cannon with the snack stick head.

After it is loaded. Place them in the fridge overnight

load the smoker at 200°f for 2 hours I used apple wood with a pinch of alder

I use bud light in the water pan, cheap bear better than drinking it. After your 2 hour smoke you have a wonderful snack stick.

We processed all the meat used in these by our selves. The moose came from one of the road kills we salvaged. The pork fat came from a pig we butchered last spring

Moose is pretty much the only red meat we eat.

It really is yummy! I can’t eat other red meats, so this is AWESOMENESS to the MAX!!!!
