Traditional French Canadian Christmas Recipe "Le Tourtiere" or French Canadian Meat Pie

It is tradition around this time of year, during the hunt, that the women make their Traditional Meat Tourtiere's, for the many feasts of the season. This is a long standing tradition of the folks of Quebec. I have adopted this skills and trade to make these pies ahead for Christmas as my mother in law taught me many years ago. My Husband was french. So today I completed the task of making these for the freezer. Follow me to see the recipe and how it's all done.

The one ingredient that is missing is the salt. I don't put it in, but it does call for 1.5 teaspoons. Now some of the older ladies from the smaller communities in Quebec will tell you to add mashed potatoes to the mix of meat, but I do not enjoy that as much, so it is optional.

This is a meat pie mix of both Beef and Pork. You will need 1.25 pounds of Beef and .50 pound of ground pork. You can buy it already mixed or buy separately and divide yourself.

You will next want to add one big onion diced finely, and 1 or 2 garlic cloves diced up as well. Next you will want to add the spices. 1 teaspoon of Thyme, .50 teaspoon of ground sage, .50 teaspoon of black pepper, 1.5 teaspoon of salt, and .50 teaspoon of cloves, lastly .50 cup of water. Add all of these to the meat mixture and fry it up.

Now if you are like me, nothing is better than homemade pie crusts. This recipe will make 4 smaller pies, double crust and a 9" double crust pie.

Now when you put your meat mixture all cooked into the pie crust for freezing you must make sure it is cooled completely. Then you will want to put the top on the pie and first wrap in wax paper.

After it is wrapped in the wax paper I wrap with one layer of cling wrap, and then shove it into a ziploc bag. And Presto you have a meal for the Holiday Season. When you are ready to bake, DO NOT THAW. Just preheat oven at 350 degrees and bake for around 20-25 Minutes. You can brush with an egg coat before placing in the oven. Hope you will give this a try this season, if not it is a great quick meal for the busy household. They also make a lovely gift for that senior who is the farmer down the street and is a widower and no longer cooks as much as he should. LOL

I should really try making some of these from scratch. These meat pies are my son's (3) favorite food for some strange reason...a real french Canadian maybe.

I've never seen a real recipe for Tourtiere before. The only one that I like commercially is the Schneider's brand. Thanks for sharing. This post is going on my page. P.S. I agree with you about the potatoes.

These were a tradition in my family too. Not only for the holidays. We never complained getting the "out of season"!

Looks like a tasty quick meal. I agree, homemade pie crust beats the store-bought crusts, no question! Now, if only we didn't just finish freezing all of our ground venison last night!

Mmmm venison in the crock pot, you can slice it with a fork. We have a lot of our community who take part in the annual hunt. Small town!

Looks yummy. Better than the store bought torts. Although they are pretty tasty sometimes. I will seriously have to consider trying to make one fresh now. :)

I've never tried tourtiere before but have heard people talk of it; some love it and some don't. Looks delicious!
