Experimenting with dehydrating tomatoes, and they turned out amazing! Also canned 32 jars of salsa. (sold several jars too).
Dehydrated tomatoes:
Sliced fresh tomatoes about 1/8" thick
Brushed with olive oil
Sprinkle with fresh parmesan cheese and basil.
Dry around 4-5 hours, then monitor until dry.
Very healthy snack or topped on salads.
Canned tomatoes:
Diced tomatoes
Fresh corn (cut off the cobb)
Diced onion
Fresh roughly chopped cilantro
Tamed jalapenos diced (hot if you prefer)
Squeeze juice of half fresh lime
Salt to taste
Cook for about 10-15 minutes to get hot throughout, put in hot jars, add lids/rings, water bath 15 minutes, remove to allow cooling, tighten lids, allow to pop seal.
