Winter Onions

I harvested more winter onions today.

I had harvested a bunch about a month or so ago, and cut them up and put them in the dehydrator! Best decision ever!! :)

So far I have used them in soups and stews and also made a couple really delicious sauces and some gravy with them. I also saw a recipe for onion soup mix, it used onion powder, garlic powder, salt and a few other things. I threw these dehydrated onions into the grinder, ground it up really fine with the other spices and I used it on potatoes, it was so tasty!

A word of caution however, when you dehydrate onions, garlic, or any strong smelling foods, you may underestimate the incredible stench that comes off them. The first time I dehydrated onions I stunk up my entire house for about a week! LoL It was so bad!

So now, I usually wait for a nice sunny day and set up the dehydrator out on the back step. It works great out there, and the smell doesn't linger in my house!

Since dehydrating them, these onions have become so deliciously sweet that I swear I could use them in anything! I highly recommend giving it a try if you have any green onions, or just onion tops from your harvest.
