Ingredients:
Eggroll wrapper - On sell at asian supermarket.
Shrimp: Prefered 10 jumbo or tiger shrimps.
Scallion: Prefered 4.
Egg: Prefered 1.
Salt
Black Pepper
-Remove the shell off the shrimp, devain it, wash it, let it dry by padding it with paper towels, then season it with salt & pepper.
Crack open 1 egg and beaten it with a fork.
Cut the scallion into 2 inches long.
Take an eggroll wrapper, place a shrimp, a scallion in the center, then fold the side, and roll it to wrap it up, at the tip end paste it with a litlle bit of egg wash.
Preheat the frying pan with vegetable oil to high heat for 2 minutes, then lower it to medium heat. Fry the eggroll until it golden brown. Remove it when done frying and place it on a plate with a paper towel.
Dipping sauce for shrimp eggroll is easy to prep as well. Just use soy sauce + sriracha sauce + 1 teaspoon of vinegar and mix it all up.
