DSC_0108-001.jpg

Gumdrops are an old world style candy, and that’s what I love about them. It is an easy project to do with kids, and homemade candy makes a fabulous gift. If you love the taste of pomegranate but not the mess of eating them, this recipe may thrill you

How to make it?

Ingredient

• 2/3 cup pomegranate juice
• 57 g Bernardin Original Fruit Pectin Crystals
• 2 tsp fresh lemon juice
• 1/2 tsp baking soda
• Salted butter
• 1 1/4 cups granulated sugar
• 1 cup white corn syrup

Instruction

  1. Whisk together pomegranate juice, pectin, lemon juice and baking soda in a medium non-reactive saucepan until combined. Bring to a full rolling boil over medium heat, stirring constantly. Remove from heat; set aside.

  2. Grease inside of a medium saucepan with butter. Then Add 1 cup sugar and corn syrup let it boil over medium heat.

  3. Reduce heat and simmer gently, until soft-crack stage is reached (280ºF on a candy thermometer), about 7 minutes. Remove from heat.

  4. Carefully pour sugar mixture into pomegranate juice mixture in a thin steady stream, whisking until combined.

  1. Return mixture in non-reactive saucepan to medium heat. Bring to a boil, stirring constantly.

  2. Boil for 1 minute, stirring constantly.

  1. Pour mixture into a 8x5 inch pan lined with non-stick foil that overhangs by 2 inches.

  2. Transfer pan to a rack and let stand at room temperature until set, about 2 - 3 hours.

  1. Using foil as an aid, lift set mixture from pan and invert it onto a greased cutting board. Remove foil and cut mixture into 1/2 inch cubes with a greased knife.

  2. Place remaining 1/4 cup sugar in a bowl. Toss cubes in sugar to coat.

  1. Store in an airtight container in a cool dry place for up to 1 week.

Cocktails

Pomegranate_Mint_Cocktail_Recipe-1.jpg

Regardless of which side you fell down upon, one inimitable fact remains:When it's Friday, and the last 24-hours have been a rollercoaster. It's enough to make anyone turn to drink.

Now as per Harry Croswell :

Cock-tail is a stimulating liquor, composed of spirits of any kind, sugar, water, and bitters—it is vulgarly called bittered sling, and is supposed to be an excellent electioneering potion, in as much as it renders the heart stout and bold, at the same time that it fuddles the head. It is said, also to be of great use to a democratic candidate: because a person, having swallowed a glass of it, is ready to swallow any thing else

Ingridents

2 ounces Charbay Pomegranate Vodka
1/2 ounce cardamom-infused simple syrup
1/2 ounce lemon juice

Mocktails

The word "mock" implying a facade of the alcoholic cocktail without any of the alcoholic content. In last few years it has become so popular that it even finds its place in the cocktail menu on many restaurant and bars. Mocktails can be described as a smooth blend of only non-alcoholic beverages, which could be fresh fruit juices, syrups, cream, herbs and spices
Ingreident
3 tbsp pomegranate seeds
big bunch mint
2 limes, quartered, plus slices to garnish
1liter pomegranate juice
500ml lemonade

Instruction

A day ahead, divide the pomegranate seeds between the holes in an ice cube tray, top up with water and freeze.

Reserve half the mint for serving, and tear the rest into a large jug with the lime quarters. Using a rolling pin, bash the mint and lime to release the flavours. Add the pomegranate juice and lemonade. Put ice cubes in each glass, then strain over the pomegranate mix through a small sieve. Garnish with lime slices and more mint.
