I might not be Playboy Material but I know how to make Elote! My introduction & A Home Recipe

Hi steemit! I'm steemitmom (Rachel, Mom of 2)! Ive been reading steemit for days amazed at the great articles and stories.

I though to myself, what could be a great introduction? Playboys not calling me anytime soon (trust me... unless they need tips on what to have catered ha), I cant sing or paint and Im a better reader than writer :D

BUT I KNOW HOW TO COOK!! YES!!

I went from a lurker to member, got prepared & here is my introduction and a recipe for something I made right before posting this.

ELOTE!

There are many ways to make elote, here is my favorite.

Ingredients and items needed:

  • Corn on the cob
  • Mayonnaise (NOT miracle whip! Important)
  • Butter
  • Parmesan Cheese
  • Lime Juice
  • Chili Powder
  • Wooden Skewers

I'm not much of a measurer so here goes.

Grab a grittle or flat pan and turn the heat on high. Tear just the top off each cob (strings) and hold the top of the corn under running water.

Now we set the cobs on the griddle or flat pan, turning every 5 mins or so. We are looking for a browning of the husk on all sides. Cobs will need to cook for approx. 20 mins total. Just leave them on and come back to check on them. No rush.

(alternately you can also grill the corn with the husk on, delicious)

While the corn is cooking, we mix 1:5 butter and mayo in a bowl. So one spoon scoop of butter means we put about 5 spoon scoops of mayo with it. Mix them together and that part is done. Set it aside with a fork for later.

Once the husk is browned on all sides, we take one off of the griddle and cut the bottom off. This is so we can "squeeze" the corn out of its husk which helps get rid of those stringy things.

Once dehusked, we take a skewer and push it into the bottom of the cob. It should be soft enough at this point that it is not hard at all.

Now we move it over to the bowl of may/butter mix we made earlier. Place the cob in there and start spreading the mix on the entire cob. A nice even coating works great. It doesn't need to be too thick.

Once its covered we move it over a plate and start coating it with parmesan cheese. A nice even coat works great.

We squeeze a bit of lime juice sporadically

Shake some chili powder on the cob

And Voila!

Now we eat it, and watch some tv! Or even read through steemit! Make sure to have a napkin on hand though because this gets messy! I hope everyone tries this and loves it like my family does!

This looks really interesting, like all the ingredients so it must be good.

Its really good! I promise. I wouldn't eat it all the time but it really is delicious. The one thing to keep in mind is to not ever boil the corn.

The chili powder and lime juice really give it that amazing taste elote is known for. If an Irish chick can make it, anyone can.
