Looking good! I'm a cooking idiot. What else did you add apart from the veg? white vinegar?

And aubergine will turn brown once exposed to air?

    It is easy with soup stock only with bonito. Since vegetables are discolored black over time, I think that it is better to eat as soon as it will look poor.
