Kashmiri Rogan Josh is a popular lamb dish from the Kashmiri cuisine of India. Here's a recipe for making it at home:

Ingredients:

1 kg lamb meat, cut into small pieces
2 tablespoons ghee or vegetable oil
2 onions, finely chopped
1 tablespoon ginger paste
1 tablespoon garlic paste
2 teaspoons fennel powder
2 teaspoons coriander powder
1 teaspoon cumin powder
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
4-5 green cardamom pods, crushed
2 black cardamom pods
2 cinnamon sticks
4-5 cloves
1 bay leaf
1 teaspoon garam masala powder
Salt to taste
2 cups water
Fresh coriander leaves, chopped for garnish
For the Rogan:

1 cup vegetable oil
1 teaspoon dried Kashmiri red chili powder
1 teaspoon cumin seeds
Instructions:

Heat ghee or oil in a heavy bottomed pan. Add the onions and fry until they turn golden brown.

Add the ginger and garlic paste, and fry for another 2-3 minutes.

Add the lamb pieces and fry until they turn brown.

Add the fennel, coriander, cumin, red chili, and turmeric powders, and mix well.

Add the crushed green cardamom pods, black cardamom pods, cinnamon sticks, cloves, and bay leaf, and mix well.

Add 2 cups of water and salt to taste, and bring the mixture to a boil.

Reduce the heat to low, cover the pan with a lid, and let the lamb cook for 45-50 minutes, or until it becomes tender.

In a separate pan, heat 1 cup of oil. Add the cumin seeds and Kashmiri red chili powder, and fry for a few seconds.

Add the Rogan mixture to the lamb curry and mix well.

Cook the lamb curry on low heat for another 10-15 minutes until the oil separates from the curry.

Sprinkle garam masala powder on top and mix well.

Garnish with chopped coriander leaves and serve hot with steamed rice or naan.
