Keto Maple Pumpkin Bake Recipe Ingredients
1 small pumpkin (aprox 10 slices) I used white pumpkin
1/4 cup butter
2tbs sugar free maple syrup
dash of maple extract (Optional)
1/4 tsp cinnamon
1/8 cup chopped walnuts
Sprinkle some sea salt
pecans to decorate (optional)
Keto Maple Pumpkin Bake Recipe Instructions:
chop on small pumpkin into 1-inch cubes with the rind removed
I used a white pumpkin as we don't have orange ones yet
add pumpkin to a casserole dish
in a microwave safe bowl add 1/4 cup butter with 2 Tbs sugar-free syrup and add a dash of maple extract (Optional) 1/4 tsp allspice and a dash of cinnamon. microwave for 30 seconds or until melted.
Next, add 1/8 cup of chopped walnuts to butter mixture, stir and pour over pumpkin mix/toss together till all is coated. sprinkle a little sea salt on top and place pecans (Optional)
Now bake it at 400 for 45 mins or until tender .. make a great side dish other than sweet potatoes!
