Keto Friendly Pad Thai

This is one of my favorites. I really do make this at least once a week when I get that Pad Thai itch. Being on Keto, I'm unable to enjoy a lot my favorite Asian foods because of the carb content. So I'm determined to change that lol.

INGREDIENTS

  • 1 Whole Lemon
  • 2 Tablespoons of Almond Butter
  • 1 Tablespoon of Sriracha Sauce ( optional add more or less for spice )
  • 2 Tablespoons of Soy Sauce
  • ½ Stevia
  • 1-2 Stalk Green Onion
  • 2 Tablespoons of cup Red Onion
  • 2 Whole Eggs
  • 3 Cloves of Garlic
  • Handfull of Cut Mushrooms
  • Handfull of Bean Sprouts

Step 1.


Squeeze 1 whole lemon into a bowl. Make sure to squeeze all the juices out, we don't want to waste any.

Step 2.


Add 2 Tablespoons of almond butter. This is a great replacement or peanut butter. And lot healthier.

Step 3.


Add 2 Tablespoons of soy sauce, give it a good stir.

Step 4. ( Optional - makes it spicier )


Add 1 Tablespoon of Sriracha Sauce, but if you like spice you can add more.

Step 5.


Add ½ a Tablespoon of stevia. Add more if you like a sweeter taste. I wouldn't add more than 1 tablespoon, but again that's my preference.

Step 6


Give the mix a good stir so it mixes together nicely.

Step 7.


Put the sauce in the Microwave for about 1 min to help it blend together.

Step 8.


Rinse one package of Miracle Noddle in water and put it to the side for later use.

Step 9.


Heat up your pan and add 1 tablespoon of coconut oil and put in the following ingredients

3 Cloves of Garlic

1-2 stalks of green onion

2 Tablespoons of cut up red Onion

3 oz of Chicken Thighs. Stir it all together.

Step 9.


Once the chicken is cooked, Add 2-3 tablespoons of sauce to your pan so your ingredients and chicken can soak up the sauce.

Step 10.


Add your mushrooms and bean sprouts. Stir everything for about 30 sec - 1min.

Step 11.


Add in your noddles and start stirring for about 30 sec

Step 12.


Put in your 2 whole eggs. And stir the eggs in until you see them cook.

Step 13.


Once the eggs look cooked, add the rest of your sauce into the mix. Stir the mi for about 3-5 mins. The cooking process will help soften the noddles as well.

Step 14.


After about 5 mins of stirring. Your Pad Thai is done and you're ready to eat.
