I started Keto about 3 months and one of the biggest struggles was figuring out what to eat daily. I tried cauliflower rice and I hated the texture of some of the foods that were keto, for some reason it didn't feel normal to me. I will now show you some great keto meals that I eat weekly with the intent of helping the keto clan around the world.
Meal 1.0 - BreakFast
Fresco Queso
- Cut two slices of this amazing cheese and fry it up with some coconut oil make them crispy.Hillshire Farm Sausage
- Cut them into little circles and fry it up with some coconut oil make them crispy.Plate both the fried cheese and sausage add some sour cream to the corner of the plate this will be your dip for the sausage (Remember to switch it up today is Sausage Tomorrow is Bacon Then is Baloney ).
Meal 1.1 - Lunch
First, find a recipe that teaches you on how to make keto bagels with coconut flower
buy some hummus
Plate a bagel with a spread of hummus or buffalo chicken dip and on the side 3 pieces of celery with ranch as a dipping sauce.
Meal 1.2 - Snacks
String cheese easy simple snack
Jalapeños cut them in half, clean them make a mix of cream cheese and bacon stuff the Jalapeño put it in the oven to cook ohh Delicious!
Meal 1.3 - Dinner
Cook 3 small pork chops squeeze a lemon on them let them rest for 2 minutes.
Buy or make cauliflower mashed potatoes add some bacon pieces, sour cream, and some cheddar cheese mix it.
Plate the cauliflower mashed potatoes with the pork chops and some sugar-free barbeque sauce on the side and have a great dinner.

I love love love queso fresco. I also discovered that depending on how you cook (and for how long) the riced cauliflower, it would change the texture significantly. It also helps if you cook it in oil, and if there are spices that mix well with such oil - the RC absorbs the flavor pretty well.
