Are you hungry? want something hot, spicy and hot? please read on...
To make this Kimchi fried rice, you will need;
-ripe kimchi
-white glutinous rice (sticky rice)
-spam, chicken, ham or even hot dogs (spam is most popular)
-eggs
-sesame oil
-dried, salted korean seaweed (much easier to find than you think) it's like sushi nori, but salted
So... first you want to dice up the kimchi and spam.. As you can see, the kimchi Im using is a deep, dark red. If your kimchi isn't ripe, the cabbage will still be a bit white. The riper the kimchi, the better. Also, for those of you who are not too familiar with kimchi, you would have to leave your home for a couple of years and return to your jar of kimchi for it to maybe, be spoiled.. it is literally almost impossible to spoil your kimchi.
once you chop up the kimchi and the spam, throw it into a hot pan (or wok) with about 2 tablespoons of sesame oil and let it sizzle.
Then, when the kimchi and spam both turn a bit brown.. throw in your rice
We use a pressure cooker to make the rice instead of using a rice cooker. It tastes much better!!
Now, you have the 3 main ingredients already in the pan cooking away, you'll notice that its a bit hard to work the kimchi and spam into the glutinous rice, since it's so sticky.. so add a bunch of kimchi juice. (this will not only loosen up the rice, but also add a ton of flavor)
Stir that all up and mix them together.. you want to just slightly brown the rice.. don't want it over cooked. As you are mixing all of these things together, throw a few eggs in another pan.. (sunny side up is usually most popular)
If you like spicy food, add a bit of sriracha.. (if you add too much, it will overpower the kimchi)
Keep the heat high, keep mixing until everything turns red.. (no white rice left). Then you throw the eggs gently onto your fried rice. Then you get your dried, salted seaweed and just crumble them over the eggs.
You'll notice we didn't use anything from our seasoning cabinet.. you're getting plenty of salt and garlic from the kimchi. The seaweed also provide all the salt you will need.
Serve your fried rice in the wok and place it at the center of your dinner table, this way when you and your guests are enjoying your meal, your second or even third serving will be nice and hot!
