A simple method that empowers cultivated mushrooms with the superior quality of wild mushrooms in terms of nutritional value....❤❤❤

We all know that vitamin D can be easily absorbed by the body when exposed to the sun. Most of us think that we don't have a problem with vitamin D because we have a lot of sunlight. People in countries that are far from the equator and do not get enough sunlight have had vitamin D issues for a long time. But now countries like India and Sri Lanka are suffering from vitamin D deficiency. Due to the change in lifestyle and beauty (fear of turning black), many people now work abroad. It is said that if the body does not get enough vitamin D, bone disorders, osteoporosis, diabetes, heart attacks, respiratory disorders and some cancers are also affected.

It is not easy for those who do not want to spend an hour or half an hour in the sun in the morning, to get vitamin D only from food and drink. Because many hard foods such as milk, eggs, cheese, butter, and bread, which are thought to be rich in vitamin D, do not contain much vitamin D. (100 grams of all of these have less than 90 international units (IU) of vitamin D. We need about 1000 international units of vitamin D per day. , fish like mackerel, tuna, sardine, (oily fish) should be eaten daily. Nowadays, it is a dream for the vast majority of the population to eat like that according to the prices. In European countries, as a solution to this, vitamin D has been added externally to foods and drinks such as milk, yogurt, cereals, and fruit juices. (Fortified)
I recently read some research papers on a very simple scientific method to overcome the vitamin D nutritional crisis. Mannam thinks that the matters that have been clearly confirmed by these researches should be immediately brought to the attention of the nutrition authorities of our country.
Vitamin D is the best from mushrooms exposed to the sun.
In fungi, the work done by cholesterol in animal bodies is done by the compound called ergosterol.
Scientists have found that when this ergosterol is exposed to the ultraviolet rays of the sun for half an hour to an hour, vitamin D is produced very abundantly. Studies have found that mushrooms that are grown commercially in a dark environment without being exposed to sunlight have negligible amounts of vitamin D, but studies have found that mushrooms grown in natural environments that are exposed to sunlight produce vitamin D at a level that exceeds our daily requirement.
However, it is clear from these studies that exposure of commercially produced mushrooms to sunlight for 1 hour to 90 minutes before harvesting or consumption after harvesting, or exposing mushrooms to artificial light that emits ultraviolet rays, can very effectively increase the amount of vitamin D. will happen It should be said that the increased amount exceeds the daily requirement of D. Also, because the gills located on the underside of mushrooms have a lot of ergosterol, it has been found that vitamin D can be produced very little by exposing the underside to ultraviolet rays and by cutting the mushrooms into strips and then exposing them to sunlight.
Vitamin D deficiency is very serious in Sri Lanka.
The matters contained in the report published in the epidemiology report (third week of March 2023) published weekly by the epidemiology unit of the Ministry of Health are extremely scary.
Accordingly, vitamin D deficiency among Sri Lankan adults is 58.8% and insufficient percentage is 31.4%. This report has shown that surveys have revealed that 90% of adults in Sri Lanka do not have sufficient vitamin D levels. It is very sad that these values are higher than the percentages of the Scandinavian countries that receive the least sunlight in the world.
Accordingly, it is written here in good faith that mushroom, which is rich in valuable nutrients and antioxidants, and on the other hand, is a vegetarian and popular food, increasing its value and eating it with the help of sunlight, should be made popular in our country. ❤❤
