Seeing Bloodbath in Crypto market sometimes made me feel sick so I tried to detach myself from the market by doing something that I enjoy, which is Baking. I love to bake because i love to eat cake and making them felt more satisfying for me than buy them. Moreover, I can make a huge portion of cake and consume it slowly so that can save me some money too!
So this time I would like to share my cake recipe, Cotton Cheesecake!! . It is so soft and delicious that I even made them 3 times already in a course of a week! (well the first time was a failure due to oven problem but that was also delicious!)

Okay! Lets continue with our cake!
INGREDIENTS:
Meringue
- 7 egg whites (medium size)
- 1/4 tsp cream of tartar
- 70 g castor sugar (This is half of the total 140 gram)
Cream cheese batter
- 250 gram Philadelphia cream cheese
- 7 egg yolks (medium size
- 60 g unsalted butter
- 100 ml full cream milk
- 70 g fine sugar
- 60 g cake flour
- 20 g corn starch
- 1 Tbsp lemon juice (you could replace lemon juice with other flavors)
- 2 tsp lemon zest
- 1/4 tsp salt
METHOD:
- Pre-heat oven to 200°C (normally without fan but you can also use fan, you just have to try it out)
- Grease 30 cm in diameter x 7 cm in height cake pan with butter, line bottom with baking paper
- Whisk cream cheese till smooth over a warm water bath
- Add yolks and whisk
- Add half the sugar (70 gram) and whisk
- Warm milk and butter in microwave (360 Watt, 1 min), mix it into batter
- Add salt, lemon juice, lemon zest and whisk
- Remove from water bath, sift cake flour and corn starch and fold into mixture
- Whisk whites at low speed till foamy
- Add cream of tartar and beat at high speed till bubbles become very small but still visible
- Gradually add the balance 70 gram of sugar and beat till soft peaks
- Fold whites into batter 1/3 at a time
- Pour into cake pan and tap the pan on the counter to release air bubbles
- Bake with water bath on the bottommost rack in a preheated 200°C for 16 mins (if you are using fan), then lower to 140°C for another 30 mins (let the heat in the oven to drop gradually with door closed) and turn off the oven and leave cake in the closed oven for another 30 mins. Remove water bath and open the door of the oven slightly at the end of the baking for another 30 mins for cake to cool.
