From the best butcher in Rotterdam straight to the grill! Dry aged cote de boeuf steak!

At 12:00 I drove to my friend Fabio. We were going to visit the best Butcher I know in Rotterdam. Butcher Schell!

We bought an awesome piece of meat and then had a great afternoon grill session with beers!

We settled for this beautiful piece of dry aged meat. Cote de boeuf.

They used this machine to cut us a huge steak.

Because of the dry aged process it's recommended that you trim the steak. The outside can be a bit 'rancid?'. That's what I'm doing here.

And on she goes! Woohoo! With rock salt only!

6 minutes on each side and let it rest for at least 6 minutes.

While resting we made a coleslaw with home made mayo.

And then it was time to cut it! O, yes!

That picture at the end says it all, absolute satisfaction & contentment. Happiness personified. First of all, that's what I call a butcher shop, wow. That looked like a band saw they used to cut your steaks, they're not messing around, lol. Enjoy the rest of you weekend!

It's a really nice butcher shop indeed. They don;t mess around. They sell every part of the animal there too. and I mean any part!

In our last interaction you told me that you have been cooking for almost 15 years but if I look at the dry meat which you have good perfectly, I could easily say that you are a 'pro' at cooking. You actually showed the whole process from purchasing dry with till eating it, through pictures. You're really a multi-talented individual. Seemit needs a person like you. Wow what a whopper ..I love the traditional butchers. They always offer a better quality products. Aged meat is usually expensive but very nice and flavoursome.

As always, you grill steak like a pro. Schell must know their meat to be around since 1796. I don't think there is anything left in my city from even 1876.

Looks great man! It seems like that delicious looking finished product made all that preparation worth it ;) Although the prep is part of the whole experience.
