Roasting Cacao for Chocolate
Roasting cacao and not burning it over an open fire is a true art. It requires intuition and management. The cacao requires 20 minutes or so of a good roast, however, not hot enough to burn it or crack it's shell. As once the shell is cracked, well the flavor enhancement is over.
A fine line indeed.
