Honestly, I used to hate baking, it's still not my number one hobby. It's mostly the dishes and sticky mess that put me off in the past, that and the fact that no matter how accurately I followed a recipe, the outcome never looked as good as the picture in the books that promise you the most delicious baked goods. Since becoming a mom though I am always on the look out for healthy snack ideas for my toddler, and making them myself has turned out to be the most affordable solution. So lately I have been rolling up my sleeves, literally, and I dedicate more time spent in the kitchen.
Now I am still no master baker and while my confectioneries are edible, they're not always mouthwatering. My toddler doesn't lie about his food, when he's not happy with it, he brings it back to me - from the mouths of babes right! He does have a favorite though, one that consist of his favorite fruit and is always a crowd-pleaser too: Apple and Cinnamon muffins!

I found an awesome banana recipe online, but the one day we were desperate for something "nyummy", as my son says, and we were out of bananas. So I substituted the mashed bananas for homemade applesauce, they came out scrumptious! And they are so easy to make, cheap too!
The Ingredients:
- 2 cups of self-raising flour
- 1 cup of brown sugar
- A pinch of salt
- 1 large egg
- Half a cup of oil
- 3 medium/large apples
- Cinnamon to sprinkle on top
Let's bake!
- Start by preheating your oven to 180 degrees Celsius (370 degrees Fahrenheit)
- Grease your muffin tin or line them with muffin cups
- Peel, chop and boil your apples until they are soft, then blend or mash (depending on your preferred texture)
- Mix all the dry ingredients together
- Beat egg together with the apple sauce and oil
- Add the dry ingredients to your egg mixture and mix slowly with a spoon (not a beater)
- Fill your muffin cups t0 3/4
- Bake for 20 minutes
- As soon as they come out of the oven, sprinkle the tops with some cinnamon
- Best served warm!
