As I get acquainted with the local authenticity of Vietnamese food, I reliased that there is much we can do to fusion it up. I learned of this dish when we were dining in one of the local street restaurants in Saigon. I couldn't follow the exact ingredients so I decided to mix it up with some chinese ingredients of my own.
The dish which was served to me had the following ingredients:
Chopped French Beans
Middle Sized Prawns
Sliced Carrots
Both ingredients were stir fried with garlic & onions. Added with some water for gravy.
And finally served on crackers with pork floss as the garnishing.
This was an excellent way of presenting the dish & absolutely tasty. Being adventurous as ever in the kitchen, I decided to try it out myself today. Looking at what I had left in my kitchen; I decided to improvide the dish and make it a 80% vegan chinese mix vietnamese dish.
My ingredients include:
1 long eggplant
Few piece of okra or best known as ladies fingers
10 number of dried shrimp (soaked & chopped)
Onions & garlic
Eggplant is cut into amount 3-5mm thickness
Okra cut into 1 inch length
Onions, garlic & dried shrimp chopped thinly
Firstly, stir fry the onions, garlic & dried shrimp; then add in the eggplant & okra. Add in some salt & pepper for taste and it's ready to serve.
I did add in 1 teaspoon of sambal belacan brought specially from home to give it a kick!
Of course, I had to buy a whole pack of crackers to complete this dish. One good news is the crackers can be served as it is or combined with this dish.
And the final product looks like this. It actually taste pretty good. The crackers may have been too thick as a base but overall I give myself a score of 7/10 for a first time tryout.
The next time, I shall try it with meat such as pork or beef or chicken since the fresh meat at the local wet market is fresh & well priced.
