I'm not sure if this will be accepted as a valid entry to @livesustainably's "Cook It Fresh" contest because the main ingredient of this dish is pork and it's not entirely vegetarian. But it has vegetables in it and I cooked it from scratch so we'll see...
Nilagang Baboy or Boiled Pork (with vegetables) is one of the easiest dish to cook. I decided to have it for Lunch because the weather was gloomy last weekend soI thought that it was a good time to eat something with soup.
So basically - my way of cooking it is to... First, sautee the pork in garlic and onion. After that, boil the sauteed pork in water and cook in low heat until the pork is tender.
Then add the vegetables. In this case potatoes, cabbage and chili (optional). Potatoes and cabbage are available all year round therefore there will be no problem whatsoever in finding the ingredients for this dish.
Lastly, serve and enjoy!
