CHOCOLATE FONDANT ON MARBLE
I haven't made chocolate dessert in a long time. And yet it claims at home! So I cooked this fondant, absolutely divine in terms of taste, but I missed the cover a bit... In fact, I made two at the same time, one for my grown-ups and one for friends we went to and I didn't pay attention to the measure of fresh liquid cream... which gave a too liquid ganache.... I still put the recipe on my blog because really, it's a pleasure to enjoy...
CHOCOLATE FONDANT ON TOP OF MARBLE
For 8 people
Preparation: 20 mn
Cooking time: 50 minutes
Ingredients:
250 g dark chocolate
250 g of soft butter
4 eggs
70 g of liquid cream
150 g of sugar
50 g of cornstarch
40 g of almond powder
50 g of white chocolate
Production :
Preheat oven th 5/6 (170 °).
Line the bottom of a square or rectangular mold (about 23 cm) with baking paper.
Melt the finely chopped or grated black chocolate in a bain-marie with the butter. Mix until the preparation is smooth.
- In a bowl, whisk the eggs with the sugar until they turn white. Add the starch, the almond powder and the melted chocolate. Pour into the mold and smooth with a spatula
- Bring the cream to a boil. Pour on the white chocolate broken into pieces in a large bowl. Smooth with a whisk. Pour this ganache on the cake then draw arabesques with the tip of a knife by pushing the tip on 5 millimeters and by walking on the surface.
- Bake for about 45 minutes.
- Allow the fondant to cool down before unmolding.
