Cocktail - Rum Eggnog for Christmas

Ingredients:

  1. 1 large egg, separated
  2. 2 teaspoons superfine sugar
  3. 1 ounce heavy cream
  4. 1/2 teaspoon pure almond extract
  5. 1/2 teaspoon pure vanilla extract
  6. 1 1/2 ounces Mount Gay Eclipse Rum
  7. For Garnish Cherry, Grated cinnamon and nutmeg.

Description:

  1. Separate the egg into two bowls.
  2. Beat the yolk until stiff.
  3. Beat the white with 1 teaspoon sugar until peaks form.
  4. Slowly fold the white and yolk together.
  5. In a separate bowl, beat the cream with the almond, vanilla, and 1 teaspoon sugar until stiff.
  6. Slowly fold the cream into the egg mixture.
  7. Add the rum and stir gently.
  8. Refrigerate overnight, or serve immediately over ice in a punch or martini glass.
  9. Garnish with Cherry, grated nutmeg and cinnamon.
