Chia breakfast on 1500m altitude in Alpujarra mountains, vegan breakfast, off-grid, sustainability, nature as medicine, paradise life

It was my second night in the community where I'm staying now. I couldn't sleep well last night - I was carried away with editing photographs and had too much of a screen time before retiring to bed at midnight. After listening to the sounds coming form an owl, I finally fell asleep for a short while. It stated raining at 5am and rained for couple of hours. When I opened the door to go out, I was blown away by the freshness of air mixed with a very strong and pine-like fragrance of rozmarin floating in the air - it was reaaalllllyyyy amazing and intoxicating!

For this morning I had planned to pick up some fruit growing on the land for my breakfast, so I moved across the paths overflowed by water from acequias (which are irrigating canals in these mountains, bringing water down from the peaks). All the paths turned into small rivers, but I bravely and enthusiastically moved toward the kitchen to make myself a cup of mynth tea and soak some chia seeds for breakfast. I mixed them with some plant milk, tahini, peanut butter and some pear marmalade - for an extra sweetness - and moved onto a fruit and nut gathering.

Raspberries were just waiting to be picked up - ripe and falling into my palm when only slightly touched, probably loosened up by the rain. I also picked up some red currants, hazelnuts and crashed them with a little stone, and also managed to find one ripe peach (most of them are still ripening). I brought it up to our beautiful kitchen and mixed everything up and dissolved into delicious mix of flavours.

I'm so grateful for ll the precious gifts from Nature.

In this little breakfast so much goodness:

  • chia seeds - massive amount of nutrients, antioxidants, lot of fiber, proteins, omega-3, high in bone nutrients, may lower the risk of heart disease, may reduce blood sugar level, may reduce chronic inflammation
  • tahini - omega-3 acids, high amounts of magnesium and phosphorus, which may help improve bone density and lower risk of developing osteoporosis
  • peanut butter - rich in fibre, energy booster, contains potassium
  • hazelnuts - rich in unsaturated fats (mostly oleic acid) and antioxidants, high in magnesium, calcium and vitamins B and E. Good for heart, help reduce the risk of cancer and support digestive health
  • raspberries - contain strong antioxidants such as Vitamin C, quercetin and gallic acid that fight against cancer, heart and circulatory disease and age-related issues. They are high in ellagic acid, a known chemopreventative, and have been shown to have anti-inflammatory properties
  • red currants - In addition to vitamin C and K, they have plenty of antioxidants and anthocyanins, iron. They will help to strengthen immune system, soothe sore throats, and ease flu symptoms, increases metabolism and prevents asthma
  • peaches - source of vitamin C and A, rich in antioxidants, treats gut disorders, destroys candida fungus, reduces inflammation, good for heart,
