Visiting the wet market yesterday in Cambodia I spotted an unusual looking vegetable. I have no idea what it's name is but as usual I had to grab one to investigate further.
The root is a consecutive series of three blobs getting smaller as they are further underground.
The outside is quite hard but when you cut these concentric blobs they are firm but not rock hard inside.
Inside is a fascinating structure. In the first photo of this series you can see that the internal structure can be exposed in two forms depending on if you cut the blob lengthwise or crosswise.
According to my contact in the market this is good for soups but they might also work well as fried chips given their interesting shapes.
I will have to try cooking with some of these soon but their shape instantly brought back memories of making stamps out of potatoes as a child.
I wish we had these instead of potatoes at art class. Their shape would make and excellent stamp! 😉

It looks like these are Lotus Roots. I only recognized them because I tend to watch a lot of anime and recognized their unique structure.

Now that I know what they are I have found a recipe for the chips! I am also intrigued by the health benefits I can see now. Steemit is amazing like this - if you don't know something it's very common that a friendly community member will tell you!
