INDIAN CRACKERS

These crackers are easy to make and can serve as a light snack. They can be served instead of bread to the soup. If you roll out the dough quite thin, matthe is crunchy and crumbly.

Based on 4 servings take:

300 g sifted flour (you can substitute wheat flour)
100 g butter or ghee
175 ml of water
2 tbsp yogurt
1 tbsp. salt
2 tbsp of sesame seeds or cumin

Sift the flour into a bowl. Butter cut into small pieces and RUB with flour. Slowly pour in the cold water, simultaneously stirring the flour with a right hand that the water is evenly distributed. Well then knead the dough. Sprinkle the table with flour and using a long rolling pin roll out the dough as thin as for noodles to make a round layer with a diameter of about 60 cm.

Lubricate the surface of the layer of yogurt, using a brush or a piece of cheesecloth, and sprinkle evenly with salt and sesame seeds or cumin. Then a special knife or fluted wheel cut into small diamonds. Lay the diamonds on the baking sheet and place in pre-heated oven. Bake on medium heat for 10-15 minutes, occasionally looking up and taking out the finished matthi that have become a Golden color.
