Where are the numbers that prove it uses less energy and produces less waste overall? The best thing we can do on those fronts is to just reduce the amount of food we throw away. Given that it tastes the same, costs the same, same texture and so on, people would go for it. As far as animal suffering it could be huge success. I would think of it like Tesla; it's going to be massively overvalued on its supposed "merits" but in reality make up a puny fraction of the market. I also doubt the consumer will pay any less regardless of how much anything this process would "save." If a cyber-steak costs 65% fewer resources and produces 65% less waste across the board, then I expect to pay 65% less for the product. Something tells me that won't happen.
