A Time-Saving Healthy Veggie Tip

I use this simple and time saving method to sneek in those healthy green vegetables on a regular basis. You see the four ingredients above that I use to make this mix. Simply chop the veggies into a large container. I use my Ninja blender and it's even faster and easier. Then you have this mixture ready for insertion into all kinds of dishes - from scrambled eggs/omlets to spaghetti sauce and stir fry skillets.

This morning I prepared this mix and decided to make a veggie egg scramble. I use a cast iron skillet just because I like the way it cooks and cleans up. I heated a Tablespoon of EVO (extra virgin olive oil) in the skillet, spooned in about two cups of the mixture, and added some diced ham. Of course, it's a perfectly fine scramble without adding any other protein, but my husband is a typical male carnivore, lol.

Cook over medium heat until the vegetables are soft (or whatever texture you prefer - I actually don't like mine completely soft - and the ham is starting to brown. Ummmm, it smells delicious sizzling in that cast iron skillet.

Once the veggies mix is ready you pour in your scrambled egg mixture and stir as it cooks. In this cast iron skillet it only takes a few minutes for the eggs to cook.

For my breakfast, since I'm currently following the Sonoma Diet, I added a slice of 100% whole grains whole wheat toast. Trust me, no matter what eating plan you follow - white bread is not your friend.

This looks pretty tasty...vegetables chopped into tiny little bits are easier to gobble down, and this also makes them easier to get paired with other stuff. Adding some protein also looks like a good idea!

Personally I won't mind white bread, but maybe that's me...I eat any bread, lol.

You're right - white bread has almost zero nutritional value. The birds love it, but I also give them whole grain bread so they get something good for them as well.
