Ok steemians.... This is another delicious and nutritious food ever eaten by Nigerians ... I am a total food expert when it comes to food especially homemade Nigeria food...
Here is the recipe though... For peanut/ melon / and groundnut soup...
-Roasted groundnut(peel before grinding )
- scotch or bonnet pepper
- Seasoning cubes
- Onions
- Assorted meat
- Stock fish
- Salt
- Grounded crayfish
- Dry fish
- Spinach
- Tomato puree..
Note that using Tomato tin paste because the soup will appear whitish and also using palm oil is considerably not good because the natural oil embedded in the major constituent in the soup which is the groundnut and will emit it when cooked as seen below
Now you can also use blended fresh tomatoes if you don't want to use already processed Tomato paste or you can as well cook without the tomatoes. The choice is yours. Now to the procedure ..
Steam your meat with Onions, stock cube,grounded fresh pepper and a pinch of salt.. use a pinch because the -roasted groundnut are usually salted ..
When the meat is properly steamed , you add water, Tomato paste , crayfish , stock fish cube and boil properly.. add your dried or smoked fish . Stir and allow to boil for a while and add more pepper if need be.
Add the Grounded groundnut and stir intermittently to avoid getting it all burnt up...
It is advisable to lower your heat and allow to cook slowly until you noticr some floated oil ..
At this point , you add the Spinach.. and cook for 1 minute ..
If you overcook the Spinach , it will surely loose its nutritional value and potency ..
And with that .. the soup is prepared ..
This soup can be served with any type of swallow or even boiled rice..as seen below ..
