What I Have Learned From Canning

Patience. I would patience is the thing I have relearned. With Pressure Canning, you have to exercise patience because it can be a long process. However, the process can give you time to clean up from one project and start prepping for the next project.

Passion. I have rediscovered my passion for cooking. I don't mean this fancy fussy style of cooking. I am talking about homemade from scratch cooking. So far this past year I made two-holiday dinners. A chicken pot pie from scratch and an apple/cherry pie from scratch. I mean from the dough to the filling. This past week I caramelized onions. Yes! I have awakened the passion I once had for cooking.

Empowered. Knowing that I can take and can food for the future without completely relying on grocery stores for everything, Awesome! Being able to open a jar of food and know everything in it is so empowering as a mom and a cooking enthusiast.

Future Projects. I have so many projects on my list of canning projects. Seriously, I have a two-page list of canning projects to do. I am behind but that is just the way things go. I simply reschedule those I didn't get done this time around.
