Restaurant style Pad Thai
(These ingredients should be adjusted based on portion size and taste preference)
Flat pad Thai rice noodle (Preferably not the ones you boil)
Chinese chives
Bean sprouts
Crushed dried Thai chili peppers
Lime wedges
Garlic
Shallot
Egg
For the sauce:
3/4 cup tamarind
1 cup of water
1 cup of palm sugar
1/2 cup of oyster sauce
1/4 cup of fish sauce
2 tablespoons of dark soy sauce
2 tablespoons of light soy sauce
Step 1: make the sauce over medium- high heat in a medium sauce pan (Remove from heat source when palm sugar has melted)
Step 2: cook the eggs in a skillet with a neutral oil, then remove with slotted spoon (Leave oil in the pan). Then cook the garlic and shallots for a few minutes
Step 3: cook noodles in pan then add the bean sprouts, chives, and cooked eggs. Drissle with the pad Thai sauce
Step 4: fry peanuts in oil for garnishing
Step 5: plate and garnish with crushed peanuts, chili pepper, and lime then enjoy!
