Balochistan Sajji is a popular dish from the Balochistan province of Pakistan. It is a roasted whole lamb or chicken, marinated in a spicy mixture and cooked over hot coals until tender and juicy. Here's a recipe to make Balochistan Sajji:
Ingredients:
- 1 whole lamb or chicken, cleaned and dressed
- 1 cup of yogurt
- 1/2 cup of lemon juice
- 1 tablespoon of ginger paste
- 1 tablespoon of garlic paste
- 2 tablespoons of red chili powder
- 1 tablespoon of salt
- 1 tablespoon of cumin powder
- 1 tablespoon of coriander powder
- 1/2 teaspoon of turmeric powder
- 1/2 cup of oil
- 1 tablespoon of garam masala powder
- 4-5 green chilies, chopped
- Fresh coriander leaves for garnish
Instructions:
In a bowl, mix together the yogurt, lemon juice, ginger paste, garlic paste, red chili powder, salt, cumin powder, coriander powder, turmeric powder, and oil.
Rub this mixture all over the lamb or chicken, inside and out. Make sure the marinade is spread evenly.
Stuff the lamb or chicken with green chilies and sprinkle some garam masala powder over it.
Place the lamb or chicken on a skewer and tie it up with a string.
Heat up the charcoal in a grill and once the charcoal is hot enough, place the skewer on the grill and cover it with a lid.
Cook the lamb or chicken on medium heat for about 2-3 hours, turning it occasionally to make sure it's cooked evenly.
Once it's cooked, take it off the grill and remove the string. Serve hot with fresh coriander leaves and lemon wedges.
