Ingredients
- 150 g plain flour
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 1 large egg
- 75 ml oil (ground nut or vegetable if you have it)
- 125 g sugar (golden caster sugar gives it a really nice caramel flavour if you have it)
- 3 bananas (the older the better, this recipe lives slightly over mushy bananas)
- 30 g oats
- 40 g dark chocolate
Pre your ingredients. You will need the following equipment: mixing bowl, spatula, loaf tin, loaf tin liner (or parchment if you do not have these - but they are brilliant so well worth it!) and kitchen scales. Heat the oven to 180’C fan.
Line the loaf tin - or if you cheat like me just place the liner in the tin.
Mix together the egg, sugar and oil in the mixing bowl.
Slice the bananas, keep a couple to one side and add the rest to the mixture.
Put some oats aside for the topping, add the remaining to the mixture.
Add all the remaining ingredients to the bowl and stir well, don’t worry about getting any air into the mixture the bicarb and baking powder will do this for you when it cooks. Make sure all the flour is mixed in well and there are no lumps of flour.
Add the mixture to the lined loaf tin, on top add the remaining sliced banana and oats.
Cook for 40-50mins in the middle of the oven, use a skewer to test the centre of the cake is cooked.
Leave to cool slightly before removing from the tin, then remove and cool completely on a wire rack. You will be left with a very moist and moorish cake which will be gone in seconds! ENJOY!
