Ricetta di riso alla Cantonese (versione di “recupero”) – Cantonese rice recipe ("recovery" version) (ITA / ENG)

Oggi avevo del riso in bianco e della frittata avanzata da ieri. Mi mancava il contorno perché avevo dimenticato di scongelarlo e non posso uscire di casa, attendendo arrivo di un corriere per il reso di un pacco. A questo punto spremendo le meningi mi è venuto in mente che aggiungendo i piselli (che avevo surgelato) forse poteva venire fuori una specie di riso alla Cantonese…

Ingredienti:

  • Riso in bianco
  • Uova
  • Prezzemolo
  • Parmigiano
  • Piselli surgelati
  • Cipolla
  • Olio extravergine di oliva
  • Sale

Preparazione:

  • Preparate il riso in bianco e scolatelo. Potete utilizzare anche del riso in bianco già cotto dal giorno prima
  • Miscelate uova, prezzemolo tritato, parmigiano, sale (poco)
  • Mettete in una padella con un po’ d’olio ed iniziate far riscaldare
  • Versate le uova miscelate come descritto e preparate la classica frittata.
  • Al termine tagliatela a cubetti piccoli, più o meno mezzo centimetro
  • Cuocete nella stessa padella i piselli surgelati , magari aggiungendo un po’ di cipolla tritata
  • Al termine miscelate riso, piselli e la frittata tagliata

Cantonese rice recipe ("recovery" version)

Today I had plain rice and omelette left over from yesterday. I missed the outline because I had forgotten to defrost it and I cannot leave the house, waiting for a courier to arrive for the return of a package. At this point squeezing the meninges it occurred to me that adding the peas (which I had frozen) maybe a kind of Cantonese rice could come out ...

Ingredients:

  • White rice
  • Eggs
  • Parsley
  • Parmesan
  • Frozen peas
  • Onion
  • Extra virgin olive oil
  • Salt

Preparation:

  • Prepare the rice in white and drain it. You can also use white rice already cooked from the day before
  • Mix eggs, chopped parsley, parmesan, salt (a little)
  • Put in a pan with a little oil and start heating
  • Pour the mixed eggs as described and prepare the classic omelette.
  • At the end, cut it into small cubes, more or less half a centimeter
  • Cook the frozen peas in the same pan, perhaps adding a little chopped onion
  • At the end, mix rice, peas and the sliced omelette
