Acquaviva delle Fonti è un borgo della provincia di Bari, nella regione italiana meridionale della Puglia. Si trova nell'entroterra pugliese, non lontano dall'Adriatico e dalla costa ionica.
Il primo insediamento di Acquaviva risale al IV secolo in un'area chiamata Salentino, non lontano dalla città odierna. Il suo nome, tuttavia, deriva da un'area ad un'altitudine di 300 metri che attraversava una fertile pianura ricca di acqua sorgiva e con una falda acquifera perenne che scorre nel suo sottosuolo. La città attuale si è sviluppata qui. Fu chiamata così fino al 1863, quando fu aggiunto "delle Fonti".
E 'stata prospera sotto i Normanni, il periodo in cui è iniziata la costruzione della Cattedrale e del Castello. Il castello sarebbe apparso con il classico disegno normanno già noto in altre città della Puglia, con un piano quadrangolare con torri angolari, anch'esso a pianta quadrata.
Solo una di queste torri è stata strutturalmente preservata; si affaccia sulla cattedrale, la cui parte finale appare chiaramente appartenere a un periodo seguente. Successivi ingrandimenti furono certamente apportati durante il periodo svevo, ma le principali ricostruzioni e trasformazioni in una tipica residenza furono fatte nel XVI secolo sotto il dominio della famiglia degli Acquaviva di Aragona.
Nel 1664 Carlo I de Mari acquistò il feudo di Acquaviva e l'anno seguente divenne Principe di Acquaviva.
Carlo I stabilì così la sua residenza qui, sigillandola con la costruzione di un edificio che avrebbe incorporato l'antico castello normanno, che di fatto fu profondamente trasformato, evolvendosi verso l'aspetto e il carattere tipico di un palazzo nobiliare. Il bellissimo edificio è oggi sede del municipio.
Dall'altra parte della strada si trova la famosa Torre dell'Orologio, collegata a quello che era il Palazzo del Sedile, dove i governanti e i cittadini si incontravano per questioni civiche durante il periodo feudale.
Dedicata all'Assunzione della Vergine Maria e al martire Eustachio, la cattedrale romanica risale al XII secolo e reca un bellissimo rosone con delicati intagli, oltre a distintivi ornamenti pugliesi. È una delle quattro basiliche palatine nella regione pugliese.
Appena un po 'lontano dalla zona residenziale, stalattiti bianche e possenti stalagmiti drappeggiano la meravigliosa grotta di Curtomartino.
La città è conosciuta per la cipolla molto dolce che cresce nel suo suolo, denominata "Cipolla rossa da Acquaviva delle Fonti". La sua produzione è molto limitata perché la coltivazione è ancora basata su metodi tradizionali e rudimentali per preservarne l'aroma e la fragranza.
Cose da vedere: Il Centro Storico, il Palazzo De Mari (già castello Normanno e Angioino), la Cattedrale, la Torre dell'Orologio, il Palazzo del Sedile, la Grotta Curtomartino, il Museo Civico, la Chiesa di San Maria Maggiore.

Acquaviva delle Fonti is a town in the province of Bari, in the southern Italian region of Puglia. It is located in the Apulian hinterland, not far away from the Adriatic and the Ionian coast.
The first settlement of Acquaviva’s dates back to the 4th century in an area called Salentino, not far from the present-day town. Its name, however, comes from an area at an elevation of 300 meters that crossed a fertile plain rich in spring water and with a perennial aquifer that flows in its subsoil. The present-day town developed here. It was called thus until 1863, when “delle Fonti” was added.
It was prosperous under the Normans, the period when construction was started on the Cathedral and the Castle. The castle would appear with the classic Norman design already known in other towns in Puglia, with a quadrangular plan with corner towers, which also had a square plan.
Only one of these towers has been structurally preserved; it faces the cathedral, the end part of which clearly appears to be from a later period. Later enlargements were certainly added during the Swabian period, but the major reconstructions and transformations into a typical residence of were done in the 16th century under the rule of the Acquaviva of Aragon family.
In 1664 Carlo I de Mari acquired the fiefdom of Acquaviva, and the following year he became Prince of Acquaviva.
Carlo I thus established his residence in Acquaviva, sealing it with the construction of a building that would incorporate the old Norman castle, which in fact was profoundly transformed, evolving towards the appearance and character typical of a noble palace. The beautiful building is today home to the town hall.
Across the street is the landmark Clock Tower, connected to what was the Palazzo del Sedile, where the rulers and citizenry met for civic matters during the feudal period.
Dedicated to the Assumption of the Virgin Mary and to the martyr Eustace, the Romanesque Cathedral dates back to the XII century and bears a beautiful rose window that has delicate carvings, along with distinctly Puglian adornments. It is one of the four palatine Basilicas in the Apulian region.
Just a little far from the residential area, white stalactites and mighty stalagmites drape the wonderful Curtomartino Cave.
The city is known for the very sweet onion that grows in its soil, named “Red Onion from Acquaviva delle Fonti”. Its production is very limited because its cultivation is still based on traditional and rudimentary methods in order to preserve its aroma and fragrance.
Thing to see: The Historic Centre, the De Mari Palace (already Norman and -Angevin castle), the Cathedral, the Clock Tower, the Palazzo del Sedile, the Curtomartino Cave, the City Museum, Church of St. Mary Major.
