The pork is fried at medium high temp, covered in peper and salt, when maillard reaction starts happening, cut and check it is properly cooked in the middle (cooking pork is a magical balance of caramelizing the exterior, making the centers turn from red to gray but avoid overcooking it as becomes dry and puaj)
