It's getting close to Christmas and that brings back memories...
When I was growing up there were few things that I liked to eat more than crepes with maple syrup on a Sunday morning after church. The hardest part was that my mom could only make one or two at a time and there four of us at the table. She would make the batter, pour, flip and serve them like an assembly line worker. I don't think she was ever able to have any because we were so greedy to eat them as quickly as she could make them. How funny that I ended up doing the same thing... first for my nephews when they slept over and then for my own kids. I'm grateful that she taught me how to make crepes, it's still a favorite treat today. They're perfect for a lazy Sunday morning or an elegant Christmas Day brunch.
Here's what you'll need to make your crepes.
Tip: Mix the eggs, milk and butter first then add the flour. You might need to add water to keep the batter thin. You can add a pinch of salt and a little bit of sugar but it's not necessary. Make sure to whisk your batter vigorously to get as much air as possible into the mixture. It helps to make the crepes light and fluffy.
If you don't have a crepe pan... ask Santa to leave you one under the tree! It really does help to have the right pan.
Heat the pan on high so that a drop of water will bounce off of the pan. Use a small measuring cup (1/4 cup +/-) to scoop some batter and pour onto a well oiled pan while swirling it around in a thin layer. It will make holes as shown and flip when golden brown.
This batter mixture should yield more than a dozen crepes.
Filling: Spread Nutella or your favorite fruit jam.
Fresh fruit with cream will make you crepes look as good as they taste.
Sprinkle powdered sugar on the top for a finishing touch.
