Japanese Cheesecake

Made this delicious cake last night and just taken it out of the fridge to sample it for breakfast (I know) this morning.

This is Japanese cheesecake which is lighter and fluffier than the traditional baked cheesecake most people are familiar with. In Japan this is called a "souffle cheesecake", the other two options you will find there are "baked cheesecake" and "rare cheesecake". The rare option is a mix of rare ingredients left to set in the fridge.

I don't think the recipe I got produced a 100% result. I found one saying that you should add cream which I wasn't sure about and I didn't beat my egg whites as well as I should have done. Oh well, it's still om nom nom and now I have an excuse to try again.

Hopefully I get it perfect and then I can drop a box into the local pub :D
