Today I am very proud to announce the creation of my new pizzeria near Paris and it's called CEPRANO PIZZA !
My restaurant is born from the passion for pizza. I draw my inspiration from my origins between Naples and Rome to create a contemporary pizza between tradition and modernity.
We are located in France at Saint-Mandé, 44 avenue du Général de Gaulle, 94160.

The Pizza
Our pizza is characterized by a thin dough in the center and generous edges, smeared with small black bubbles sign of optimal maturation.
The Dough
Our dough is highly hydrated and consists only of water, flour, fresh yeast and sea salt. It is slowly matured for 48 hours to develop its aromas and high digestibility.
The Wood Oven
Baking at 500°C in our traditional neapolitan oven takes about 60 seconds. The condiments are just seared and thus retain textures and flavors.
