ROASTED PLANTAIN AND FISH WITH PALMOIL SAUCE

Ingredients

4 fingers of ripe plantain
Fish
Palmoil
Onions
Fresh pepper
Utazi leaves(optional)
Salt to taste

  • Peel the plantain.
  • Wash and give it small cuts not too deep and rub with salt.
  • Set the plantain in an oven tray or over an open fire. Note: This depends on what you are using to roast the plantain.
  • Leave it to roast for some minutes turning it at intervals.
  • Scrape off the back of the plantain which is covered in soot.
  • Break the roasted plantain into bits and set aside.
  • Roast your fish after spicing it well
  • Pound your onion, pepper and Utazi leaves(optional).
  • Scoop out the ground pepper and onions in a clean plate. Pour in palm oil.
  • Add salt to taste.
  • Heat a little to melt the palm oil.
  • Serve with any accompaniment of your choice.
