Friday Night Sweets | Just What the Doctor Ordered, Chocolate Chip Cookies!

The weekend is here and boy am I ready! Let's celebrate Friday my foodie friends!


What a busy week! A week filled with a few long overdue Doctor and Dentist appointments verifying the Birds are indeed in great health. I think we Birds deserve a little reward! I'm sure the Doctor would approve!

How do Chocolate Chip Cookie sound?

Now these aren’t just any chocolate chip cookies, they’re grain free and made with Tahini! Remember, we’re trying to stay healthy, lol. Tahini is so good for you, in fact it contains more protein than most nuts! It’s high in Vitamin B (which is great for the brain) and Vitamin E which helps protect the heart and prevent stroke Tahini, made from ground Sesame Seeds, is typically used in Hummus but it can also be used in salad dressings, smoothies and of course lots of baked goods!


We’re also using Monk Fruit as our sweetener! Are you familiar with Monk Fruit? I have to admit I haven’t seen this at the market, but I was able to buy it in granular form.

This fruit is native to China and has been used medicinally for many years. Only now has it made its way around the world, popular as a sweetener. Monk Fruit in Dried form is 150 times sweeter than sugar, has 0 calories and it does not raise blood glucose! Wow, what a great sweetener substitute!

Time to put it all together! Ready in 15 minutes!

Only 4 ingredients needed!

  • Tahini (1 cup)
  • Monk fruit (1/2 cup)
  • Fresh Egg (qty 1)
  • Chocolate Chips (1/4 cup)

Note: option to add 1 tsp vanilla if you love vanilla! Chopped Walnuts are amazing too!

It all starts with…


Tahini, Monk Fruit and Egg in your favorite bowl! Mix well!

Roll the dough into…


balls and place them on a parchment lined baking sheet. I gave each one a pat, a little flat top. Bake at 350 degrees for 12-13 minutes. Let them cool completely!!!

I have to tell you, I baked these cookies and left them to cool while I went to market…..I guess they were good, Mr. Bird was smiling like the Cheshire Cat in the book Alice in Wonderland. Luckily there were enough left to get a few good shots!

However do you get the proportions right -- and not wind up with either bricks or something that won't even hold together?

Believe me it does happen!!! Sometimes the dough just goes right into disposal! I just don't post those failures. lol My husband is the true taste test and if it's a fail, he lets me know :) I'm trying to eliminate grains and sugars where I can but we love cookies! Tahini, sun butter, peanut butter and almond butters work so well in this application. I;m not saying they're like my old fashioned chocolate chip cookies....but I can eat more of these and not feel horrible! :) Sweeteners are my latest areas to experiment with.

Absolutely delicious AND healthy, gosh and no flour in there, quite amazing Mrs Bird!

I know! No flour! The egg and granulated sweetner along with the Tahini binds well and creates a great cookie. Trying to eliminate grains as much as we can but still enjoy those sweet treats! :) Glad you enjoyed my friend! Have a great week!

Oh my goodness, glad to know you learned something!!! If you've had Hummus you've had Tahini, it's so tasty and one of the main ingredients along with chickpeas. Good for you! Monk Fruit is new to me. A nice sweetener alternative but I'm still in the experimental stages. These cookies worked! A nice chocolate fix for the weekend, lol Thanks @simplymike, have a great week!

Yum! I’ll take the whole tray please. I’ve been using xylitol for a natural sweetener and so far I like it. Never tried monk fruit but if I see it then I’ll try it. As always your food only looks delicious 😋

These cookies are quite a surprise! And in a mortar and pestle too. I usually make my own tahini, but I never had a monk fruit or even know where to get one.
One day I hope to try and make something with tahini besides chick pea or egg plant.

Well monk fruit was new to me @abitcoinskeptic :) I wanted to find another granular sugar alternative. This one is tasty. Perhaps you could find it online? I love Tahini and have made delicious cupcakes as well. This one is easy to make and easy on the waistline too :)

I never knew you could use monk fruit as a sweetener, but you're spot on, they'r very sweet. Actually, I only known it in its original form as we buy it from the Chinese supermarket and use it in our soup. I don't think you can use the original fruit for baking so you're better off with the granulated version.

They look delicious, the tahini adds a unique flavor, now the monk fruit, I've never tasted it, we'll see if you get it here, I'd like to try!

Well I'm experimenting with alternative sweeteners, found Monk Fruit as I researched. It's pretty tasty, worked well in this recipe. I first tried it with morning tea :) I was able to purchase it online although I have seen it at the market. Let me know what you think!

Very interesting recipe. I love tahini, but have never had cookies made with it.

Surprising results are always nice @toddrjohnson! I was skeptical but I've now tried these with Peanut, Almond, Sun Butter and now Tahini, they all work. We're trying to eliminate those extra carbs while still enjoying sweet treats :)

... with Tahini! I've only ever had that with a bit of honey... it would never have crossed my mind to make biscuits with them! Thanks for the idea!

Oh my, I haven't had Tahini with honey, sounds like an amazing breakfast treat @bengy. These cookie treats are so easy, you should make them with the girls, they'll love you for it :) Use your favorite granulated sweetener, enjoy!!

Oh wow! I love chocolate chip cookies, and I never even thought of Tahini as an ingredient! I have been using almond flour as a substitute for most of the flour in any of my recipes that call for flour. Now I may have to go with Tahini as well!

Tahini is so good and works well in cookies. I have posted a few other recipes which were tasty as well. Tahini is a bit lighter than almond flour, I hope you'll give it a try and let me know what you think :)

I’m taking notes here hang on a minute... tahini... monk fruit... got it!! Those cookies look so soft and delicious on top of those creative ingredients. Maybe I can use that monk fruit to sweeten up my next batch of ice cream???? Hmmm
