WHAT A BUSY DAY

Ordered 10 dozen ears of corn from the local Amish farmer. Great stuff, organically grown and crisp and sweet as ever. It took a lot of hobbitizing to complete this one. Picked the stuff up at 9:30 A.M. and by 7:30 P.M. I put 9 dozen in the freezer. Kept a doven out for immediate consumption.

After boiling 3 dozen at a time for 7 minutes they were placed in an ice bath for 7 minutes to halt any further cooking. Doing this helps to retain the flavor and crispness of the corn.

Corn is given a minute to dry off and then we vacumn packed 56 complete ears, 4/bag.

Took 50 ears and made them into nibblets. That took a while, but you should taste the end product. Eating corn on the cob for the next several months may help to extend that Summer Feeling. After that, winter rolls in hard in this area and the nibblets go great in all of the different soups Robin conjures up.
