Today I will present my favorite recipe Vegetable quiche and minced beef another way to eat breast (recipe that brings you vitamins and minerals ...) and especially easy to prepare.
But where does the quiche come from?
The word quiche probably takes its origins from the Frankish-French Küche dialect, which meant "pie" or "galette", and which also gave kuchen (for "cake") to our German neighbors.It is at the very beginning of the 17th century that we find the use of the word quiche in the accounting records of a hospital in Nancy. Called more simply pie, fouace or eschaude, the quiche officially made its appearance in the French language 1869, in the Littré.
In the origins, it is indeed the quiche Lorraine which is at the origin of all the quiche recipes known today. Nowadays, the quiche lorraine is a salty pie based on a broken dough (although in its region of origin we still often use a bread dough as flamekueche), filled with a device called migaine (composed of eggs and fresh cream, and seasoned with pepper and sometimes grated nutmeg) and garnished with smoked bacon.
The first known recipes, around 1605, included German cheese, but it was gradually replaced by bacon. Nowadays, we talk about quiche Vosges when the filling is supplemented with cheese, or Alsatian quiche if it is with onions.
My quiche recipe with vegetables and minced beef
Dough ingredients :
- 200 g flour
- 100 g butter
- 1 pinch of salt
- 1 pinch of sugar
- Glass of water approximately: 20 cl
Method :
- Remove the butter and leave it at room temperature about an hour and 30 minutes in advance.
- Put the flour in a bowl, add salt and sugar.
- Add the ointment butter by working with your fingertips to obtain a coarse sand.
- Then end with the water to form a ball of dough. Flour lightly if necessary so that it does not stick.
- Let the dough ball rest for about an hour in a cool place.
Filling ingredients :
- 1 pepper finely chopped.
- 1 finely chopped zucchini.
- 1 carrot.
- 1 onion .
- 1 glass of milk.
- 1 square cheese
- 200 g finely chopped mushrooms
- 200 g minced meat
- 2 eggs
- 1 pinch of salt
- 1 pinch of pepper
- 1 tablespoon fresh cream
- 2 tablespoons of olive oil
- 100 g grated cheese
Method :
Heat the oil, add the onions and fry for 5 minutes.
Add grated carrots, and continue to brown for 5 minutes.
Add pepper and zucchini.
Continue cooking until all liquid has evaporated.
Remove from heat and let cool.
Stir in the minced meat, salt, pepper and olive oil in another pile.
Crush your minced meat with a fork to prevent the formation of large pieces and brown until cooked.
Remove from heat and let cool.
In a small bowl, whisk the eggs with the cream, milk and cheese. Season with salt and pepper
Line a lightly greased 23cm pie plate with the sheet of dough and prick it with the fork.
Put the stuffing back in your mold
Add the mixture of eggs, milk, cheese and cream on top.
Cover with grated cheese.
Bake, uncovered, at 180C for 25-30 minutes or until it is golden and puffed in the centre.
